Avoid Making Fondant with Marshmallows One of the most attractive types of fondant to make includes the use of marshmallows. The recipe only includes marshmallows, powdered sugar, water, and vegetable shortening. The fondant tastes much better than a lot of others, but there is one main problem with this type of fondant. It will spring back like dough when you try to roll it out, and it will resist getting bigger and thinner as you work on it. The fondant will eventually get to the right size and shape in most cases, but it will take a lot of work. You may also find that the fondant does not get quite as thin as you want because the density of the marshmallow is not easy to make thin. Use Fresh Ingredients Second, you need to use fresh ingredients when you use fondant. Just because most people will not eat the fondant does not mean you should use old ingredients. Fresh powdered sugar is especially important because you do not want it to clump and make hard little balls in the fondant. If your powdered sugar is a little clumpy, then you need to run it through a sifter first so that it is perfectly powdery. Preserve Your Health When You Preserve Food — Always Use The Right Type Of Salt

If you’re learning how to preserve foods, you know the importance of including salt in a lot of the brines. Salt helps kill off undesirable bacteria, and it also flavors the foods. However, you’re not using just any old salt. When preserving foods such as vegetables, you must use the specific amounts of salt called for in the recipe. Otherwise, you could ruin the look of the foods — or you could make yourself very sick. Too Much Salt Ruins the Batch When making preserved vegetables, salt extracts a lot of water from the vegetables, which gives the pickling solution the literal space it needs to flavor the vegetables — the pickling solution refills the now-empty cells in the vegetables. As the pickling solution infiltrates the vegetables, it kills off bad bacteria that could cause the pickles to spoil. If you don’t use enough salt, you could throw the sodium balance off and end up with some surviving bacteria. This could potentially make you sick. Of course, if you use too much salt, that can ruin the pickles as well. The Wrong Type of Salt Could Ruin You Another risk is using the wrong type of salt. Pickled vegetables call for pickling salt, which is pretty much pure salt only. Beginning preservers are usually told early on to never use regular table salt because the iodine and other additives can make the pickles look horrible — the color can change and the brine can take on an unappetizing cloudy sheen. So you know table salt is out, but if you’re out of pickling salt and you have other types of salt on hand, you might start eyeing those — especially if part of your preserving lessons have included meat. And this is where things get really tricky. Cured meats are created with curing salt, also known as pink salt. The pink is from food coloring that’s added so you don’t end up pouring the curing salt into a recipe that calls for other types of salt. Curing salt also contains sodium nitrite and nitrate, which help preserve the meat. You can’t use curing salt in place of pickling salt, though. Remember how, when you pickle items, the pickling solution soaks into the foods? If you use curing salt, there’s the risk that too much of the curing salt, nitrites, and nitrates in the salt will stay in the vegetables. warns that too much curing salt can be lethal.
